If you bottled your wine, remember to add enough priming sugar, according to the instructions in your kit, to get it up to as near the appropriate head space as possible. We've heard some people say that it doesn't matter whether you use the priming sugar in the wine, but we think it's best to use it in the wine.
The fruit and/or sugar solution is going to need to be stirred. You can add the fruit and sugar separately and mix them together, or add them to the fermenting wine. The latter will give you a clearer wine, but the former will give you a deeper colored wine. You can also add a fruit sugar solution to a demijohn containing a wine yeast and ferment that way.
Once you are happy with your first batch of wine, it's time to rack and filter. We recommend racking into a bucket or some other container with an airlock. Do this several times over a few weeks until your wine is clear. If you have a racking cane, use it. If you don't have a racking cane, you can use a funnel and siphon.
You can add 1lb of fruit, 1/2lb of grapes or a 1/2lb of white sugar for every 5 gallon demijohn. In a 10 gallon demijohn you will need 1lb of fruit or sugar. We don't recommend adding more than the recommended amount as it can result in a sweet wine.
If you have a wine filter like a Grolsch filter, use it. If you don't have a filter, you can use a cheesecloth spout set between the demijohn and the bucket or another container with an airlock. Don't use a nylon straining bag because it will likely get stuck on the sides of the demijohn and you will have to take it apart, which will not be fun.
